Schools Nutrition MBW2018 Day 2 23rd January 2018 On Day 2 of #MagicBreakfastWeek we continue to celebrate the best meal of the day - breakfast! - taking inspiration from a sunnier part of the world. One of our new restaurant partners is Tuyo, a delicious local spot on Broadway Market in London specialising in contemporary Mediterranean food. They have shared with us a savoury breakfast of poached eggs, hummus, gremolata, tomatoes and feta, perfect for those mornings when you have a little more time to nourish yourself, or weekend brunch perhaps. Also, all the ingredients are made fresh with no additives! HUMMUS RECIPE 500g cooked Chickpeas [if from tin rinse in cold water] 1/2 lemon juice [adjust to your taste] 30ml olive oil 1Teasp Tahini 1 Small garlic clove [finely grated] 1 Tea spoon ground cumin [adjust to your taste] Salt / Pepper In a blender combine the tahini and lemon juice, 1 min on max, scrape the sides and process for 30 sec more (this is key for a smooth hummus). Add the olive oil, garlic, cumin, salt & pepper and process 30 sec on max speed. Add the chickpeas into the blender, process on speed 10 until it’s smooth and light. Taste and you should feel on your plate, lemon, cumin , tahini. Check if it’s well seasoned. ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ GREMOLATA Zest of 1 unwaxed lemon 1 small bunch of parsley, finely chopped 1 small clone of garlic, finely grated 1 tbsp olive oil Mix all the ingredients together. ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ EGGS MY WAY 4 large free-range eggs Salt Freshly ground black pepper Line a cup/small mug with cling film, leaving some draped over the sides. Crack one egg into the cling film, add a pinch of salt and pepper, then seal the cling film by twisting it at the top and tying a knot - try to ensure there are no air bubbles in the cling film. Repeat the process for all 4 eggs. Bring a pan of water to the boil, place the eggs into the pan on medium to high heat and cook for 6 minutes. Remove the eggs from the pan and undo cling film - you have the perfect poached eggs! ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ PUTTING IT ALL TOGETHER Layer the hummus on to the toast, followed by the poached eggs, and place the tomatoes around the plate. Finish with a sprinkle of the gremolata, the crumbled feta, and a touch of sea salt to taste.
