Schools Nutrition MBW2018 Day 2 23rd January 2018 On Day 2 of #MagicBreakfastWeek we continue to celebrate the best meal of the day - breakfast! - taking inspiration from a sunnier part of the world. One of our new restaurant partners is Tuyo, a delicious local spot on Broadway Market in London specialising in contemporary Mediterranean food. They have shared with us a savoury breakfast of poached eggs, hummus, gremolata, tomatoes and feta, perfect for those mornings when you have a little more time to nourish yourself, or weekend brunch perhaps. Also, all the ingredients are made fresh with no additives! Crack one egg into the cling film, add a pinch of salt and pepper, then seal the cling film by twisting it at the top and tying a knot - try to ensure there are no air bubbles in the cling film. Repeat the process for all 4 eggs. Bring a pan of water to the boil, place the eggs into the pan on medium to high heat and cook for 6 minutes. Remove the eggs from the pan and undo cling film - you have the perfect poached eggs! ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ PUTTING IT ALL TOGETHER Layer the hummus on to the toast, followed by the poached eggs, and place the tomatoes around the plate. Finish with a sprinkle of the gremolata, the crumbled feta, and a touch of sea salt to taste.
