Our resident Nutrition Manager, Harriet Green, has shared a healthy pancake recipe for Shrove Tuesday and every day!

Fruit & Oat Pancakes

What you'll need...

•100g oats (we particularly like Quaker Oats, who give porridge oats free to our partner schools as part of a standard Magic Breakfast)
•2 eggs
•1 banana
•100g plain yoghurt
•A pinch of baking powder
•A splash of milk (your choice)
•Oil (for the pan)
•Sliced Mangoes (tinned) - or your favourite fruit
•Sliced Strawberries
•Fruit juice from tinned fruit
 

How to make them...

•Blend the oats, eggs, banana, yoghurt, baking powder and milk together until smooth, add more milk if too thick.

•Heat a frying pan over a medium heat, brush with oil, then pour out any excess.

•Drop heaped tablespoons of the batter into the pan and cook for 3 minutes, or until little bubbles start to form on the surface.

•Carefully flip with a palette knife and cook for a few more minutes, or until the pancakes are lightly golden and cooked through.

•Plate and serve with your favourite fruit toppings.
