Healthy ice cream for breakfast? You heard us right!
Set your children up for success this exam season with Shivi Ramoutar’s exam-fuelling breakfast recipe! Breakfast is an exam essential. By making use of frozen chopped banana which later gets blended with milk and yoghurt, you’re left with a healthier alternative to ice cream. The addition of peanut butter adds to the protein and should help make it more of a proper breakfast.
You could of course add your own modifications to this – sprinkling on some chopped up hazelnuts for example, or a few fresh blueberries, or even some granola!

Healthy Ice Cream
Equipment
- Blender Food processor also works here – or a fork
Ingredients
- 2 whole frozen bananas
- 120 grams Yoghurt Greek or coconut yoghurt for a dairy free smoothie
- 1 tbsp peanut butter or almond butter
- 0.5 tsp vanilla extract
- 1-2 tbsp milk as needed
Instructions
- Add all ingredients to a blender or food processor.
- Blend until smooth and creamy, scraping down the sides if needed.
- Scoop into a bowl and add your favourite toppings!
