This is a really nice and quick healthy version of everyone’s favourite – pancakes! The mashed banana makes this a more nutritious and filling breakfast, which hopefully the whole household can enjoy!

A healthier pancake recipe

Easy Banana Pancakes
Equipment
- Frying pan
- Whisk
Ingredients
- 150 grams flour
- 1.5 tsp baking powder
- 1 pinch salt
- 0.5 tsp baking soda
- 1 tbsp honey
- 240 ml buttermilk
- 1 large egg
- 1 splash vanilla extract
- 1 tbsp melted butter
- 1 whole banana ripe bananas are best here
Instructions
- Mix the dry ingredients – in a bowl, combine the flour, baking powder, baking soda and salt.
- Mix the wet ingredients – in a separate bowl, whisk together the buttermilk, egg, honey, vanilla, melted butter and mashed banana.
- Pour the wet mixture into the dry ingredients. Gently fold together until just combined.
- Heat a lightly oiled pan over medium heat.
- Spoon in the batter and cook until bubbles form on the surface, then flip and cook until golden.
- [Optional] To serve, top with yoghurt, blueberries and a drizzle of honey.
