Makes about 15-20 mini pancakes (leftovers can be frozen!)

 

Ingredients

1 egg
2 tbsp Little Freddie Strawberries, Blueberries & Oats
150ml whole milk
120g self-raising flour
Olive oil, to grease the pan

To serve: mashed strawberries & blueberries

Method

  1. Lightly beat the egg in a mixing bowl. Add the Little Freddie Strawberries, Blueberries & Oats and milk and whisk to combine. Sieve in the flour, then fold until just combined.

  2. Heat a non-stick frying pan over a medium heat and add a little bit of oil. Once hot, spoon little rounds of mixture, about 4-5 cm in diameter, into the pan. Fry for 1-2 minutes each side, or until golden brown. 

  3. Serve the mini pancakes still slightly warm with a dip of mashed berries and extra Little Freddie Strawberries, Blueberries & Oats.
