Vegan scrambled egg & avocado on toast

Equipment

  • Frying pan

Ingredients

  • 240 grams Crackd The No-Egg Egg (Other vegan egg options exist which imitate scrambled egg)
  • 2 slices Toasted Warburtons Tiger Bloomer (Will work with other brands of bread!)
  • 2 whole Finely chopped spring onions
  • 1 whole Large ripe avocado in slices
  • 1 whole Roasted red pepper in slices
  • 1 tbsp Vegetable oil (Olive oil would work too)
  • 1 tbsp Vegan green pesto
  • 0.5 tsp Salt
  • 1 pinch Black pepper (to taste)

Instructions

  • Place the oil in a non-stick frying pan on a medium heat, add Crackd The NoEgg-Egg and turn gradually with a spatula or wooden spoon and cook for 3-5 minutes or until fully cooked.
  • Place the scramble onto the toasted bread.
  • Add the sliced avocado and top with sliced roast red peppers.
  • Season with salt, pepper, a drizzle of vegan pesto and sprinkle with chopped spring onions.
